My birthday was tasty.  I had biscuits and gravy with seitan sausage at City O’ City.  Got a Scout cookie (large vegan samoa) to go, walked home and napped.  Woke up, saw A Good Day to Die Hard with Andy.  It was even worse than I hoped.  It was a fun laugh.  Went to Sweet Action Ice Cream and picked up a pint of vegan chocolate (made with coconut milk). Bethany picked me up Orange Peel Gardein Chicken from Yard House.  We watched the new Parks and Rec, which was fantastic, and a bunch of DS9.  
Today was a good day.  I’m pretty sure I gained 5 pounds.  #worthit

  • Chickpea flour omelette with spinach, onion, green & red peppers, avocado, and tomatoes.  Served with a side of toast topped with Earth Balance and garlic powder.
I used this recipe for the omelette.

This was so good.

I made this recipe… somewhat.  I added chili powder, shallot salt and asafetida.  First time making vegan cheese with cashews.  It turned out pretty magical and creamy.  Okay, more creamy than magical.  I’ll be honest and say I didn’t use any sorcery while making this.  
Lots of protein, vitamins and fat between the cashews, nutritional yeast, soy milk and oil.
Next time I’ll try and have the patience to make broccoli/peas and maybe some sort of fake bacon (crispy fried seitan).

    Went to the Carrot Mob Vegan Pizza buffet at Marquis Pizza tonight.  It was great.  Ate too many pizzas, but it was totally worth it.

    Top left:  Vegan Whitey - Silken tofu sauce, spinach, broccoli and bac’uns

    Top right:  (top) Mashed potato heaven - Olive oil, taters, bacons, green onions and tomatoes. (bottom) Seitan Pizza - Denver Seitan sausage.

    Bottom:  Pizza De Résistance - Olive oil and Sriracha sauce, onions, garlic and roasted brussels sprouts.

    All of the pizza had Daiya and they used in my favorite way…. sparingly.  

    The Pizza De Résistance was my favorite.  The Vegan Whitey was a close second.  I also had one that was called Cheese-Less Sticks.  It was just a bunch of vegetables on floppy cold dough.  The rest of them were on the most amazing thin crust.  It was quite the treat.

The best idea I’ve ever had.  
Vegan chocolate ice cream from Sweet Action (via Nooch since SA is closed for January) topped with coconut milk whipped cream and shredded coconut.  
The next time I have people over for dinner, this will be dessert.

    Made these tasty vegan cupcakes with coconut milk whipped cream.  Ultra delicious.

    It’s super important that the coconut milk sit in the fridge long enough for it to come out like the website shows.  Also, having an actual hand mixer would help.  I tried using our Ninja blender, but it didn’t quite work right.  

    Regardless of the texture problem, the whipped topping was so good.

  • Late Thanksgiving dinner post.  Tofurkey with roast parsnips/carrots/onions, stuffing, green bean casserole and mashed sweet potatoes/butternut squash.  For dessert we had cinnamon ice cream from Sweet Action with homemade apple dumplings and a tasty caramel.  

    I didn’t really care for the Tofurkey right out of the oven.  It was the plainest of all the holiday roasts I’ve tried.  It was much better the next day.  That being said, the Field Roast is the best, followed by the Gardein and then Tofurkey last.
